Concussion Memories

Last week, on a day I wasn't there... little Ana fell down the stairs at her house. She scraped her shoulder & got a concussion! She was woozy, had nausea & even vomited!
Her doctor (who also happens to be my doctor!) gave an "observe & protect Ana" diagnosis for her parents to follow who in turn, gave it to me!
Do you know how hard it is to prevent a 3 yr old from jumping on her bed, running in the house, walking on the stone wall, climbing trees & roughhousing w/her older sister just to keep her safe from maybe bumping her head again?!?!?!?
Next to impossible, I tell you!

It did bring me a memory of my own concussion experience though!
Let me share it w/you!

It was the beginning of summer, between my 3rd & 4th grade.
In the summer it wasn't unusual for my mother to kick us outside to play w/instructions to remain outside until dark! With so many kids, I guess it was how she kept sane during school vacations!
She'd send out a loaf of bread & a jar of peanut butter for our lunch. Sometimes, we got Kool Ade but mostly, we drank from the garden hose if we were thirsty. When we weren't busy w/our chores & other assignments like weeding the huge garden, we had a lot of "yard" to occupy us which included a pond, several muddy streams, trees, hills and an old barn.

One day, while playing in the barn w/some friends, I *fell* through a trap door
(long ago, used by cow farmers as a way to push manure in the cellar of the barn. It collected on a concrete slab so a tractor could scoop it to spread on crops).

I *fell* about 10-12 feet onto the concrete slab, headfirst!

I don't recall the actual *fall* but I DO RECALL waking up, feeling blood running down my face & having extreme pain in my left wrist! I remember screaming & running. My mother & older sister, PJM, attended to my injuries. I was woozy & had nausea so off to the doctor we went.
Once the blood was washed away & they could see the wound, I got 2 tiny stitches. Head wounds, even tiny ones, cause a ton of blood!
My wrist was badly sprained, not broken. I was vomiting by now so I was admitted to the hospital for overnight observation. Every so often, a nurse would enter the room & shake me to be certain I wasn't sleeping. I got my own TV! I got to stay up past my bedtime! Hawaii 5-O was on that night! Finally, I was given the OK to sleep, though by now, I was scared enough about being away from home, that I couldn't fall asleep.
When I returned home the next day, it was right back to my "normal" routine, injured or not! I was expected to do my chores, watch my younger siblings & stay out of the house during the summer days! The only difference I noticed... getting screamed at by everyone who saw me favoring my left, sprained wrist! I thought they were just being mean & thoughtless by insisting I use my very sore & painful wrist, but as it turns out, by using it, I speeded up the healing process. Weird.

And that's the one & only concussion I ever experienced.

*fall* or *fell*    It wasn't a real FALL! Unbeknownst to me at the time, my brother, PAM, who enjoyed being a troublemaker, was in the barn cellar & heard me heading towards the area where the trap door was located. He waited until I got close, then... using a long handled rake, he pushed the door open & I went through!

also, I mentioned my sister, PJM, because I remember she ran away from home (for the 1st of many times) while I was in the hospital. I had thought it was odd that she was being so attentive to me that day, but I guess it was her way of saying "good bye".

Tomorrow, the Painting Starts!

C left for college in August.
The very next day, I began to paint her room.
The walls were done quickly, though definitely NOT PROFESSIONAL QUALITY!
That being said, it still looks better than before I painted the walls!

Over the past few WEEKS, I've been trying to scrape up the old paint the previous owners had put down under the rug. That ugly, blue indoor/outdoor rug!
Since her room is 3/4 of the basement, I've divided this job into 3 phases.
It's our hope it will look like a studio "apartment" when done only w/o a bathroom or kitchen!

Tonight, I've finished prepping the 1st section of floor! I've washed it w/a bleach solution to kill any mildew/mold left over from last years flooding.
The floor must be totally dry before I can paint.
The dehumidifier is on, fans are blowing & will remain on throughout the night.

Once the paint is on, 24 hours must pass before I can do a 2nd coat w/color sprinkles. Another 24 hrs before we can walk on it & 7 days before I can put furniture back in that area.
Then, I can finally say, "Phase 1 is complete!"

C will be home for Christmas.
With the time its taken me to complete the 1st phase,
what are the odds I'll have her whole room completed by Christmas?

Family History

Genealogy, Family History, one's heritage & ancestry as well as many other similar words have been a part of my life for as long as I can remember. I loved listening to stories from the "older" members of my family as well as other peoples stories about their own families. I loved the Sunday Sacrament Meeting talks whenever Sister Poulsen would speak. It always revolved around her search for her family's history with the search, at times, being more interesting than what she discovered!

As interested as I am in my family's history, in particular my mothers side, I'm afraid to start. I fear I will not be able to stop, that it will take over my life & I feel I cannot do that.

His, Hers... a blended family.
My best guess: this is our 1st time sitting as a family around the table. Which would make this photo taken around September of 1969.

Photo on left: I'm in the photo, but couldn't be seen unless you had X-Ray vision!
I am in the photo on the right @ or about 1967 or early 1968.

This was what we assumed would be our last family portrait! No one expected anymore siblings!
A year or two later, another sister arrived!
A side note about this photo... my younger brother, DBM, bottom right, in the white turtleneck sweater had just vomited all over the floor moments before this photo was taken. yucko

My daughter, T, has begun an interest recently in her family history beginning w/her maternal side. I'm excited to hear what she uncovers & eager to share w/her what I know. I'll start w/these photos & see where it goes.
I wish her all the best in her efforts!

Can't Sleep

It's a dark & stormy night.
Got home around 5.
I put more stripper on another section of the basement floor, waited 2 hrs then scraped it up.
Yes, I needed to re apply. Letting this coat set overnight.
This paint is incredibly strong!
I've set up my Fantasy Football teams roster for this weeks games.
I've done some laundry & dishes.
It's humid enough for me to turn the A/Cs on for the night.
I'm retaining water so I feel all puffy & swollen!
Maybe I'll take some ZzzQuil.

Spent the day w/these 2 munchkins (biggest sister was at school most of the day)

This guy turns TEN YEARS OLD tomorrow! He's only 5 in the photo. Maybe 6, I forget!

Stripper

For Christmas this year, C has requested a bit of sprucing up in the basement bedroom she calls home when she is not @ college. Three quarters of our basement is her domain. I'm trying to fulfill her request, one third at a time, but it's turning into a big chore, like the stairs were earlier this summer!

Several small floods due to sump pump failures over the last 12 years have caused us to rip up & toss out the indoor/outdoor blue carpeting installed by the previous owners. There was a layer of paint under the rug which was chipping & bubbling. All the old paint must be removed before I can apply the correct type of paint for a concrete basement floor.

The "silly me" thought I could scrape it off easily w/a scraper. I mean, it was bubbly & peeling in places already so how hard could it be? I have blisters on my hands, sore knees & had sweat dripping off me every time I tackled the job. Not much of the paint even budged!

After 2 weeks of trying (during my downtime), yesterday I broke down & bought a small bottle of paint stripper. It's a biodegradable kind so the citrus odor isn't too bad. The old paint though is being tough! I think it may have Super Glue mixed in it! Some spots come up easy. Other spots have taken 3 applications of stripper before coming off. Today, I've used up the last of the stripper & have re-claimed only HALF of the part of her room I'm tackling! I'm taking a break until the weekend.

The stripper is much easier than plain scraping, but still hard on the knees & arms.
Thank goodness for Advil!

The Patriots will most likely end up winning today's game vs the Arizona Cardinals in this Week #2 of the 2012-2013 NFL season, but I'm finding it difficult to watch the game!

Why?

The tight end #81, Aaron Hernandez has injured his ankle & is probably unable to return to the game! He's the tight end on my Fantasy Football team! I need the points he would've produced!
This year, our commissioner wouldn't let me keep my favorite guy, Wes Welker #83, so I picked another Brady target in Hernandez.
Guess who DID get Welker?
THE TEAM I'M PLAYING THIS WEEK! With no Hernandez, Brady will throw to him! ARGH!

Update: The Pats lost! The kicker shanked a FG attempt wide left in the final seconds.
As for my fantasy team...
We are currently leading by almost 15 pts, even w/zero pts from the injured Hernandez!
Our opponent has 1 more player to get in the game on MNF tonight but is only projected to score less than 11 pts, so I'm hopeful!

Baked 'taters' Turnips

Another 'mock' potato recipe was tried out tonight, with dinner.  While still not real potatoes, it is much,  MUCH CLOSER to the real thing than the 'mock' potatoes made with cauliflower, in my opinion.
We really miss our potatoes!
Once in a GREAT WHILE, I'll take 2 baseball size russet potatoes, peel & slice them into french fries shapes, rinse & pat dry. Then, drizzle some olive oil & sprinkle on black pepper. Place on a foil lined cookie sheet & into a hot oven (450 degrees) for about 20-30 minutes until browned and sorta crispy. They are close to fries & each of us gets 1 potato's worth of "fries" with dinner.

Baked 'tater' Turnips
(serves 4  *contains 14 carb grams per serving)

What you need:

  • 1 medium rutabaga or 3-4 baseball sized turnips
  • 3T melted butter (I use unsalted)
  • 2T light sour cream
  • 2 eggs, beaten
  • 1/4 cup fresh, grated Parmesan cheese
  • Salt & pepper, to taste (I used 1/4 tsp each. Though, B added more S&P to his serving)

What to do:

  • Peel & cut turnip into 1/2" chunks
  • Put in saucepan & barely cover w/cold water
  • Cover pot & bring to a boil
  • Reduce heat & simmer, covered, until tender. Drain well
  • Put into a food processor or blender & puree until smooth (Might work better/faster in small batches)
  • Add in the remaining ingredients & puree to combine
  • Pour mixture into a 2qt casserole dish (no need to grease the dish!)
  • Bake @ 350 for about 20-25 minutes. Top & edges should be browned, so time may vary

Optional ingredients:

  • Top w/extra Parmesan cheese before baking
  • Add some minced garlic to the simmering turnip
  • Add 1/4 tsp dill or dill weed to the mixture
  • Bacon bits are always a good thing!

Climbing Trees!

Who needs a playground? Trees are natures jungle gyms!

Smiling, because she is finally tall enough to climb on a few branches w/o assistance!

Cookie Monsters!

Yeah! There would have to be a very special occasion before I could make & eat this recipe! But it sure looks yummy!

Oversized Chocolate Chip Cookies

2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup raw white sugar
1 T real vanilla extract
1 egg
1 egg yolk
Scant 2 cups of semisweet chocolate chips

Preheat the oven to 325 degrees.

Sift together the flour, baking soda and salt, set aside.

In another bowl, cream together the melted butter, brown & white sugar until well blended. Beat in the vanilla, egg & egg yolk until light and creamy.

Combine both bowls of ingredients until just blended. Stir in the chocolate chips by hand.

On 2 cookie sheets, spray some non-stick cooking spray & have cooling racks ready! Drop cookie dough, 1/4 cup each onto the prepared cookie sheets, about 2" between cookies. Yes, fill a 1/4 cup measuring cup to get the perfect size & shape!

Bake for 12 to 14 minutes in a preheated oven or until the edges are lightly crisp.  Cool on baking sheets for a couple minutes and then put them on your wire cooling wracks to cool completely.

Yield: 1 1/2 dozen, if you avoid eating the raw batter, that is!

Recipes for Cleaning, which I may try

Burned On Gunk Remover
(for burned on gunk on pots, burner pans, frying pans & stove tops)
  • Mix 1 tsp of white vinegar with 2 tsp of cream of tartar into a paste.
  • Smear it onto the burned on gunk.
  • Wait 15 seconds & rinse off

Streak Free Window Cleaner
(works great on the car windows too, even leaves that "squeaky clean" sound)

Mix 1/4 cup cornstarch into 1 quart water

Soak a paper towel in the mixture & clean your glass
Wipe dry with a clean, dry paper towel

Missing "You Know Who"

Very, very true!

I added this one to see if anyone really scrolled down this far on the page!

She lives in the South! Just a matter of time before Carlotta starts saying this!

So true!

I wish!

Breakfast Recipe (to be made the night before!)

Some of my worst "food memories" involve cooked breakfast foods.
I love boxed cereals so much. They are sweet, tasty & most of all, easy to prepare! Sadly, they're not as healthy as a cooked breakfast. I like to sleep in as long as I can in the morning, so cooking is simply out of the question. For me, breakfast is a hard meal to keep healthy & convenient.

I've heard of egg casseroles & finally found a recipe in which I liked all the ingredients!  I just took my trial one out of the oven & had a taste! It's pretty good!
It made enough for B & I to have a hot breakfast for the next 3 mornings. If it tastes this good in the morning (after a quick microwave re-heat) I may have solved my better breakfast dilemma!

Spinach & Sausage Egg Bake
makes 10 very low carb servings

What you need:

  • 1 lb breakfast sausage, casing removed, browned & drained
  • 10 oz frozen spinach, thawed & squeezed dry as much as possible
  • 6 strips of bacon, cooked & crumbled
  • 1/4 cup each sweet onion & red bell pepper, finely diced
  • 1 cup each shredded Monterey Jack & Cheddar cheeses
  • 10 eggs
  • 3/4 cup 2% milk
  • 1/2 tsp. dill weed
  • 1-1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • 1/4 tsp salt

What to do:

  • Preheat oven to 375 degrees
  • Spray a 9x13 baking pan w/non-stick spray
  • Put the cooked sausage on the bottom of the pan
  • Layer the spinach, bacon, onion, red pepper & cheeses
  • In a bowl, beat together, eggs, milk & spices
  • Pour egg mixture over the layers already in the pan
  • Bake uncovered for 30-35 minutes or until a knife comes out clean when inserted in center
  • Let stand 5 minutes before serving

The recipe says it tastes just as good for the next 3 days! Doesn't recommend freezing though, so no more than 3 days in the fridge!

Keeping In Touch

Kaya's 1st day of Kindergarten! She was only 4 months old when I began being a part of her life. I'm very happy she sent me a photo so I can still feel like a part of her life!

Another Try @ Spaghetti Squash & A Pie!

I haven't lost much weight this summer! I hit the "15 lbs lost" mark in late June/early July & since then, only 3-4 more lbs have been lost.
I've cut out potatoes, rice, chips, tasty breads (I use low carb, high fiber choices), almost all desserts & sweets! My activity levels have increased, though I don't have a set "exercise" routine. I drink more water, less diet soda (I still love my Mountain Dew) & fresh veggies & fruits are a big part of my diet.
By the end of September, I should know how much, if any, my A1c levels have dropped. Ugh.

So, in my continuing efforts to eat healthier, despite the nonexistent weight loss proof, here is another tasty recipe I found, tried & liked.

Spaghetti Squash-Mediterranean Style
 makes 4-6 servings

What you need:

  • 1 spaghetti squash, about 3 lbs, quartered & seeds removed
  • 3T olive oil
  • 1 medium onion, diced
  • 1 medium fennel (anise) bulb, diced small
  • 1 medium carrot, peeled & diced small
  • 1 tsp salt (you may need more "to taste" at the end)
  • fresh, black pepper, to taste
  • 2 garlic cloves, minced
  • 1/4 tsp crushed red pepper (optional, but I liked it)
  • 1-28 ounce can petite diced tomatoes, drained
  • 2 small zucchini, trimmed & diced
  • 1/3 cup minced, fresh basil
  • freshly grated Parmesan cheese

What to do:

  • Steam the spaghetti squash in a vegetable steamer, skin side up for 20 min or until soft.
  • OR... Roast in oven until soft.
  • Let cool.
  • Use a fork to "loosen" the strands. Place in a bowl & set aside.
  • Meanwhile: In a large nonstick skillet, heat oil over med/high heat
  • Add onion, fennel, carrot, salt & pepper
  • Cook until softened, about 4 minutes
  • Add garlic & crushed red pepper
  • Continue cooking until onions are translucent, about 3 more minutes
  • Add tomatoes & zucchini
  • Reduce heat to low & cover pan
  • Simmer about 20 minutes, stirring occasionally until desired tenderness of zucchini
  • Stir in basil
  • Taste & add salt & pepper, if needed
  • Add spaghetti squash to pan & gently toss until heated through
  • Top w/Parmesan cheese

We served it with pork chops, but it would go with any meat OR none at all!

I also found a Banana Walnut Pie recipe for those trying to cut down on sugar that's not too bad!
And it's super easy, to boot!

Banana Walnut Pie
serves 6

What you need:

  • 5-6 medium size bananas (the riper the bananas, the sweeter the pie)
  • 1/2 cup unsweetened ALMOND milk (Don't knock it! I tried it & it's good!)
  • 1/2 cup walnuts (plus a few extra nuts, for garnish)
  • 1- 9" pre-made graham cracker or Oreo cookie pie crust (this is the only "sweetness")

What you do:

  • Preheat oven to 350 degrees
  • Into a blender, slice the bananas
  • Add milk & nuts
  • Puree until smooth, like a pancake batter
  • Pour mixture into pie crust
  • Place some walnuts on top
  • Bake for 1 hour
  • Let cool
  • When cool, put in fridge for 2 or more hours
  • Serve cold (I recommend 2T of sugar free whipped topping on your slice!)
